TFTAK at Tallinn FoodFair 2026

Tallinn FoodFair once again brought together food industry professionals to discover new products, exchange ideas and meet partners from across the sector. Nearly 30 TFTAK colleagues visited the fair this year to follow emerging trends, connect with companies and explore where food innovation is heading.


TFTAK was also represented at two different stands, showcasing our expertise, development work and products created together with industry partners.


A meeting point for the food industry


As Estonia’s professional food industry fair, Tallinn FoodFair offers a valuable overview of new products, ingredients, technologies and consumer trends. Colleagues from our functional foods and beverages, alternative proteins and microbiome teams were among those exploring the latest developments.


Just some ideas that caught our attention included forest-based marmalades, high-protein jam, egg protein for hybrid formulations, savoury ice creams with balsamic, basil and thyme, mushroom-based drinks, fermented lemon and new products made from round goby.


TFTAK represented at two stands at Tallinn FoodFair


Visitors could meet TFTAK at both the Adapter area and the SUBMARINER stand presenting the RoundGoby project.


At the Adapter stand, Hanna Lang represented TFTAK alongside other Estonian research organisations. Visitors could taste functional beverages developed by our team and discuss shelf-life studies, packaging selection and how scientific expertise and research infrastructure can support product development.


At the SUBMARINER stand, Rain Kuldjärv and Annette Kägu presented the RoundGoby project together with project partners. Supported by the Interreg Baltic Sea Region Programme, the project explores how the invasive round goby can be turned into a valuable local resource.


Visitors could taste round goby dishes, discover pet snacks developed by TFTAK together with producers, and learn about other applications created for both people and pets.


The fair was a good reminder that food innovation can start from very different ingredients, technologies and consumer needs - and there is still plenty to explore.
